I love stopping over to see Sandy at Hilltop House Bed & Breakfast

We sit out on the veranda, have a hot cup of coffee and catch up.  Sandy always serves up something delicous that she cooks up in her kitchen.

Ham and Egg Cups

12 slices of deli ham sliced thin
1/4 lb. swiss cheese
1/4 cup heavy cream
1 tsp. prepared mustard
12 eggs
fresh dill, parsley or other herbs

Butter a 12 cup muffin pan.
Preheat oven to 375
Whisk heavy cream and mustard together and set aside.
Arrange a thin slice of ham inside each buttered muffin cup. Break one egg inside each cup.  
Pour 1 tsp. of cream mixture over egg.  
Add 1 Tbsp. shredded swiss cheese on top of each and sprinkle fresh dill, parsley or favorite herb on top.  
Bake for 18 minutes and serve warm.
