There are so many hiking spots near this Amenia B&B and we’ve only just touched the tip of the iceberg, but Bash Bish is one that we kept hearing about and it didn’t disappoint! falls runs thru. As you approach the top it opens up into a beautiful double sided waterfall. You can climb down the stairs to get close.

Happy Thanksgiving, from Hilltop House!

I hope everyone enjoyed their holiday weekend.  I did.  My family came up for a visit.  They bought along pie, so I let them in.  I really wanted to post some pictures of the food, but after spending all day in the kitchen, I couldn’t wait to eat, I ran to the table and that’s all I remember.  It was delicious.

Some things I am thankful for

~Our new roof is nearly finished…

~My job!  I’m so happy to have this Bed and Breakfast.  I really feel blessed here.  I’m glad to finally be able to do something I love.  And I do love it.

~All the wonderful guests I’ve had, from literally, all around the world.

~Hand dipped (by ME) chocolate candies.  Looks like that class at the Culinary Institute is paying off!

I’m so thankful for them that I can’t stop eating them.

~OH!  And let’s not forget, HEAT, HOT WATER, and ELECTRICITY!

Good food, simple pleasures.

 

I love stopping over to see Sandy at Hilltop House Bed & Breakfast

We sit out on the veranda, have a hot cup of coffee and catch up.  Sandy always serves up something delicous that she cooks up in her kitchen.

Ham and Egg Cups

12 slices of deli ham sliced thin
1/4 lb. swiss cheese
1/4 cup heavy cream
1 tsp. prepared mustard
12 eggs
fresh dill, parsley or other herbs

Butter a 12 cup muffin pan.
Preheat oven to 375
Whisk heavy cream and mustard together and set aside.
Arrange a thin slice of ham inside each buttered muffin cup. Break one egg inside each cup.  
Pour 1 tsp. of cream mixture over egg.  
Add 1 Tbsp. shredded swiss cheese on top of each and sprinkle fresh dill, parsley or favorite herb on top.  
Bake for 18 minutes and serve warm.

Maybe a little romance is needed

Spend a romantic weekend in the country … wake up to the smells of fresh biscuits just from the oven.  

Have breakfast on the veranda.

Hilltop House Orange Banana Salad 

  • 4 bananas peeled and sliced in 1/8″ thick slices.
  • 3 oranges peeled, sectioned and cut in half.
  • 1/2 cup frozen raspberries.
  • 2 tablespoons brown sugar or honey.
  • 2 tablespoons orange juice.
  • 1/4 teaspoon cinnamon.
  • 1/4 cup shredded coconut, (optional).

Mix all ingredients in a bowl and let set at room temperature for half an hour; stiring frequently to blend juices together. 

Serves four (4)
